I think this may be one of my favorite videos I’ve ever posted on Substack, and that’s a tough choice to make, as I have a lot of videos to choose from. I’ve been doing this now for well over two years and have covered a lot of info and topics here. But this one—this one I love not only because the finished dish was so ridiculously delicious and also beautiful but it also just screamed SPRING to me in it’s loudest voice. Not typical, precious, Easter basket food spring, like baby peas and fetal asparagus and robin’s eggs and buttercups, but SPRING as in screw you, winter, we’re through, you’re finished and I’m getting on with things and my life. And that this may just be a plate of cauliflower, olives and kale puree but look at those colors! That green, the color of LIFE and HOPE and renewal. That’s what I love about Passover, incidentally, not just that it’s the retelling of the story of Exodus, but that it’s a celebration of spring and renewal. Of light returning and little green things sprouting and people and animals coming out of hiding and turning to face the sun once again.
